Some people measure the performance of a creamery by its productivity. At Gillot, the two most important indicators are time and hand-made. These only two criteria form the basis of a unique cheese recipe since 1912.
The PDO Gillot Camembert is an exceptional cheese, made with respect for ancestral traditions of master cheese-makers. It is:
– Made with a base of carefully selected raw milk, collected at the producers’ in the area of the hedged farmland of the Orne,
– Moulded by hand with a ladle.
In order to obtain the Protected Designation of Origin, our cheeses meet many specifications stipulated in Decree #2008-984 of 18 September 2008.
